HARVEST
Grapes are hand-picked and collected in 12-kilogram (26-pound) bins, by stages within the same estate barracks. Harvest is always conducted in the early morning to make sure grapes reach the winery at low temperatures. Grape bunches that do not conform to quality and health standards are immediately discarded while at the estate.
VINIFICATION
Traditional winemaking method, conducted in concrete vats. Pre-fermentation maceration at 10℃ (50°F) for 48 hours. Fermentation occurs at 25℃ (77°F), with moderate extraction activities, achieving a fresh, fruity wine of medium structure. Fifty percent of the volume is aged in used 225-liter (60-gallon) French oak barrels for 8 to 10 months. It undergoes 100% malolactic fermentation.
TASTING NOTES
This wine offers a blend of herbal and berry aromas with subtle notes of oak, well-integrated with just a hint of smoke. Medium-bodied with good ripeness and balanced acidity.
FOOD PAIRING
Game birds, roasted red meats, lamb, spicy aged hard and semi-hard cheeses.
